Tasty Simple Stir Fry

I really love stir fry... it is a staple is our household and we tend to make it up as we go each time.  I usually use any vegetables that we have on hand or what is left over. This recipe has my main favorites including red bell peppers, zucchini, and broccoli.  Here is the basic recipe I used:

Ingredients:
6 Chicken Breast Tenders
1/4 Cup of Soy Vay Toasted Sesame Dressing & Marinade
1 Small Onion 
2 Red Bell Peppers 
2 Small Zucchinis 
2 Cups of Broccoli
2 Cloves of Garlic
1 Tbsp of Chili Paste
Sriracha and Soy Sauce to taste

Directions:
Before I left for work, I defrosted 6 Frozen Chicken Breast tenders and then marinated them with the Soy Vay throughout the day.  When I got home from work, I started my Wok and began chopping up my veggies. You can cut them up however your prefer, chopped, sliced, diced, doesn't matter. I put the chicken tenders in the pan with the juice and cooked and flipped until mostly cooked through.  
I spread out the chicken around the edge of the wok and added all the veggies, garlic, chili paste, sriracha and a little soy sauce.  I tried to put the chicken on top of the veggies so they wouldn't over cook.  You can keep the chicken in tenders, like we did, or cut them up into smaller pieces.
Once your veggies are cooked to your preference, put the stir fry over rice, brown rice, or noodles and that's it! Enjoy!

My Apartment Garden

So I also have a love to garden. It is all very new to me, so I am learning as I go.  I started with a small pot of soil and some basil seeds.  Not much came of it, and I was a little disappointed.  After I had taken a break from my gardening hobby, Nick, with his Handyman skills in mind, was going to make a cabinet to go in our bathroom. He then decided to donate the outside of the cabinet to my gardening hobby to make an area for my herbs. Turned out to be another great love of mine.

I started with planting Cilantro, Oregano, Green Onions, and Flat-Leafed Parsley.  Each herb had a mind of its own... My Cilantro took off, the Oregano barely looked like it was thriving, the Onions sprouted but were too small to last and the Parsley was going according to plan.

I labeled each herb by writing on an old cork and using a wire hanger to stick it in the soil. This was a Pinterest find, of course.  Another Pinterest find was to take my Parsley, which later grew overwhelmingly large and hard to keep up with, and fill ice trays with the chopped (food-processed) and cleaned Parsley and fill with a little bit of water. Froze the ice trays and later had an endless supply of parsley for my green smoothies (a later post). I found this idea from the Organic Gardening Website.

Buffet Table - Bar

On to Nick's second project... We needed a Buffet Table, so Nick quickly got to work. This project was more detail oriented than the dining room table, but he did a great job.  I did, however, participate in building the buffet table. I was mainly used to determine measurements and hold pieces in place, while Nick put it together. 

In the end, it turned out and great and we use this more as a bar than anything else.

Just FYI, these items were not on his "Honey-Do" list, these were all his idea :-)



Nick's First Project

Earlier this year, Nick and I moved in together after four years of dating. I've known him for close to 15 years now, so it wasn't a shock that we would be living together.  As we were figuring out the furniture we needed for our first apartment, we realized our place was large enough for some upgraded furniture that we did not have. Looking through our favorite catalogs (Restoration Hardware, PotteryBarn...) we could not find anything that fit our price range. Dining room tables, dining room chairs, buffet tables, bars and coffee tables can be quite pricey and they weren't in either one of our budgets.  

This is where Nick became quite the Handyman and dove right into building us a dining room table. Nick spent a week straight heading to Ganahl Lumber to get all the right lumber and tools he needed.  Here are a few pics of our table in process and the final outcome!






Welcome to my blog! This is all new to me too, so bare with me...


I’m Lindsey and there are three things in life that I absolutely love…well, there are way more than three, but we’ll keep it to a minimum.

The first is FOOD! I mean, what can I say? I just love food. Now I’ll be the first to tell you that everything is fine in moderation, and I am not saying that you, or I, for that matter, should go out and stuff ourselves silly. But I am saying that there are some truly decadent things out there and it is always nice to satisfy that need. I love to cook, I'm learning to like to bake, and I love to try new recipes and adding a little spin of my own to them.

The second thing I love is anything “Rustic”. I love old barns, rusty tin cans, and old bottles and jars. There’s just something about the way they look. How you can tell they were made by a person rather than by a machine. The little imperfections that give the item character. I love things that have character!

Which brings me to the third thing I love…well not thing, person. I love my boyfriend Nick. Nick is, well, Nick is a character to say the least. He is always making me laugh and doing all sorts of wacky things that he knows I’ll just eat up. But that’s only part of why I love Nick. I also love him because he has a natural ability to be “crafty”. He is super handy, and can pretty much build anything out of wood. He loves taking on little projects and loves to tinker around with things. I don’t intend on “sharing” Nick, but I do want to share the things he makes for our home.
